Sometimes on a cold day you need some spice to warm your cockles and this salad will do just that! Two weeks into my new healthy eating regime I managed to pick up a cold and all the snot rags that having one entails. I decided to give this recipe from Vegangela a go with some tweaks in the hope that chillis would help me kick this lurgy up the arse!
Served up perfectly on its own, as a side or with some vegetarian/vegan burgers or sausages!
2 servings – approx 340 calories per serving
- 1 tin (approx 240g) chickpeas
- 1 medium carrot – coarsely grated
- 1 small red onion – finely chopped
- 2 tomatoes – diced
- 1 large celery stick – diced
- 1 sweet red pepper – diced
- 1 small green chilli – finely chopped
- small handful of coriander – roughly chopped
- 1tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp ground cumin
- salt and pepper
Drain and rinse off the chickpeas then place them in simmering water for 5 minutes – I do this as I find it gives them a better flavour. While chickpeas cook, chop all your vegetables and add to a large bow. In a smaller bowl make up the dressing. Once chickpeas have simmered for 5 minutes take them off the heat, drain the water then leave to cool for 10. Add them to you chopped vegetables mix then add the dressing and combine until covered!
